Pancakes (or drop scones)
This is how Mum always makes pancakes so I'm continuing the tradition. Apparently
pancakes mean different things to people in different countries but Mum told
me that this recipe is for something which is called called drop scone in
some places.
I
prefer to eat them hot, with butter and sugar but you can also make a batch
and eat them later.
Ingredients (for base)
- 8 oz plain flour (or soda flour if you can get it)
- 2oz sugar
- 1 egg
- ½ pint of milk
Instructions
- Whisk all the ingredients together until you have a smooth runny mixture
- Heat a non-stick frying pan to a medium heat, add a drop of butter and
wipe around with a piece kitchen roll, to grease it
- Using a large spoon, drop some of the mixture into the centre of the pan,
leaving it to spread out into a circle
- When bubbles form and start to burst, turn the pancake over
- Leave to cook for about the same length of time as cooking the first side
took, then remove from pan and place on cooling rack
